my own velvet

salam & hello peeps :D

i am very bless today . guess what , i've baked my own red velvet cupcakes . weee :D thank you to my dearly sister for helping me out as well . the bad news is , i broke my mom's pemutar machine . i end up using hand whisk . tsk tsk . dah tak larat nk kacau guna tangan for the cake , yaya helps to kacau the cream cheese pulak . we take turns like 6 times . hahaha .

so basically , these are the recipes .

Red Velvet Cupcake

1 1/2 cups butter, softened to room temperature*
2 cups sugar or less
3 large eggs
1 1/2 cups vanilla yogurt
3Tbs. red food coloring
1 1/2 tsp. vanilla extract*
3 1/4 cups flour
3 Tbs. cocoa powder
2 tsp. baking powder
1 1/2 tsp. baking soda
3/4 tsp. salt

Preheat oven to 350 degrees F. Grease and flour two 8-inch or 9-inch cake pans or line three muffin pans with cupcake liners.

In a large mixing bowl, cream butter and sugar till light and fluffy. Add eggs one at a time. Combine yogurt, red food coloring and vanilla extract in a small bowl. Sift together flour, cocoa powder, baking powder, baking soda and salt in another bowl. Alternate adding the yogurt mixture and flour mixture into the large bowl. Pour batter into prepared pans or lined muffin pans. Bake for 30-35 minutes (15-20 minutes for cupcakes) or until a toothpick inserted in the center of the cake comes out clean. Cool completely.

Cream Cheese Frosting

8oz cream cheese, cold
1/2 cup butter , softened to room temperature
2 tsp vanilla extract
2 tsp lemon extract (optional)
2-3 cups icing sugar, measure then sift

With the mixer on a low speed, beat the cream cheese and butter till blended. Mix in vanilla and lemon extract. Slowly add the powdered sugar, a cup at a time. Once all the powdered sugar is added, increase to a higher speed to whip up the frosting till light and fluffy.

but i refuse to use certain ingredients . i mean , the one that is so hard to get lah . and most of all , i make it less sugar . or else , mommy confirms marah :p

these are the ingredients needed . i do not use vineger and buttermilk . instead of 3 eggs , i only use two eggs . jimat ! hahaha .

cocoa powder and cake flour need to be sieve first . & i also did not put in baking soda . jimat !

after 3 tea spoon of red food colouring :D

then , i put it in cup . using just only 2 spoons . this recipe will help you to get about 20 cups of cupcakes .

fresh from microwaves . you need to cool it first .

since the machine broke , yaya helps me to hand whisk the frosting . thank you yaya :D this cupcakes are for you . weeee .

after finish the frosting , just put it on top of the cupcakes .
